Butternut Crinkles
Ingredients:
1 1/4 cups brown sugar
2 eggs(large)
1/2 cup canola/corn oil
1 cup cocoa powder
1 tsp instant coffee powder
1/4 tsp salt
1 tsp nutmeg powder
1 tsp vanilla essence
2 tsp baking powder
2 cups all purpose flour, sifted Butternut Streusel:
3 tbsp butter/margarine
2-3 tsp orange food color(or less)
1 cup all purpose flour, sifted
1/3 cup white sugar
1-2 tsp nutmeg powder(more or less)
Procedure:
1) Crinkles: Combine brown sugar, eggs, canola oil, cocoa powder, instant coffee powder, salt, nutmeg powder and vanilla essence. Mix it until smooth
2) Add baking powder and all purpose flour. Mix it well but do not over mix
3) Chill for 30min or 1 hour
4) Roll 1 tbsp of the dough into a ball and flatten it
5) Generously coat with butternut streusel
6) Place it onto a lightly greased frying pan
7) Sprinkle more butternut streusel Cover and cook for 10min. over low heat
9) Cool crinkles completely Butternut Streusel:
1) Melt margarine and add orange food color. Mix it well
2) Add all purpose flour and mix it well.
3) Cook for 3 min. over low heat
4) Add white sugar and nutmeg powder
5) Set aside and cool it completely
