Banana Upside Down
To make the easiest banana cake recipe, you’ll need:
3 medium egg
6 medium saba bananas/banana plantain (3 pcs. mashed and 3 pcs. sliced into rounds)
1/3 cup light brown sugar
1/2 cup condensed milk
1/4 cup vegetable oil
1 cup all-purpose flour
1/2 teaspoon baking powder
INSTRUCTIONS
1. Slice the bananas into rounds. Half of it keep aside for topping, then mash the remaining. 2. To a large bowl, add the egg, condensed milk, vegetable oil and whisk to combine.
3. Add the flour, baking powder, and stir until just combined; do not overmix.
4. Add the mashed bananas and stir to combine.
5. Divide 1/3 cup brown sugar into three and put in a llanera or tin. Heat over medium heat to melt sugar; add a tsp. of water and let it caramelize. Once done, let it cool down
6. Arrange the banana slices in an even flat layer for complete coverage over the llanera or tin.
7. Evenly pour batter over the banana slices. Cover with foil and steam for about 45 minutes to 1 hour.
8. Allow llanera or tin to cool before inverting and serving.
